Maple syrup isn’t just for breakfast. Enjoy it as part of your dinner menu too!

Glazed Pork Chops – main course
4 pork chops
1 tbsp. oil
1/4 cup maple syrup
1 tsp dry mustard
Brown chops over medium heat. Reduce heat and cook uncovered until done. Remove chops to a platter, then drain fat. Add syrup and mustard, stirring until well mixed. Return chops to pan and glaze about 2 mins on each side 

Maple Carrots and Parsnips – side dish
2 cups peeled, sliced carrots
2 cups peeled, sliced parsnips
¼ tbsp. water
¼ cup maple syrup
2 tbsp. butter
2 tbsp. chopped candied ginger
2 tbsp. chopped parsley
Combine carrots with parsnips and water. Microwave, covered on high for 10 minutes, stirring half way through, then drain. Stir in maple syrup, butter and chopped candied ginger until richly glazed. Sprinkle with chopped parsley.

Maple Syrup Butter Tarts – dessert
Whisk:2 eggs
1 cup brown sugar
1/4 tsp salt
2 tsp vinegar
1/2 cup maple syrup
6 tbsp. melted butter, walnuts or raisins, or bothUsing your favourite pie dough, cut about 4 inch circles to make tart shells. Fit into muffin cups. Fill the tarts until three-quarters full with filling.Bake in 450 F (230 C) oven until filling is puffed and bubbly, and pastry is golden, about 12 minutes.
